Shaved Zucchini and plum salad

Ingredients: (Serves 4)

2 Zucchini, shaved thinly with a vegetable peeler

2 Plums, cut into wedges

2 Spring onion, thinly sliced

½ Bunch of flat parsley, leaves picked

2 Tablespoons capers

2 tablespoons pinenuts, toasted

¼ Cup olive oil

1 tablespoon Dijon mustard

Juice of 1 lemon

 

Method:

Combine zucchini, plums, spring onion, parsley, capers and pine nuts in a large bowl.

Whisk together olive oil, Dijon mustard and lemon juice in a small bowl. Toss through salad then serve.
