Apple, red cabbage and walnut coleslaw

Ingredients: (Serves 4)

1 Granny Smith apple, grated or julienned

1 Cup red cabbage, thinly sliced

1 Carrot, grated or julienned

4 Spring onions, thinly sliced

¼ Cup toasted walnuts

½ Bunch dill

Juice of 1 lemon

2 Tablespoons olive oil

½ Cup thick Greek yoghurt

Method:

Combine apple, cabbage, carrot, spring onions and walnuts in a large bowl. Set aside.

To make dressing, place dill, lemon juice, olive oil and yoghurt in a food processor and blitz until well combined. Alternatively, chop dill then stir in the remaining ingredients. Toss slaw and dressing together then serve.
