Peach, goats cheese and tarragon tarts

Ingredients: (Serves 4)

2 Tablespoons olive oil

2 red onions, sliced finely

1/4 cup balsamic vinegar

1/4 cup brown sugar

2 sheets puff pastry, halved

4 peaches, cut into wedges

200g Goats cheese, crumbled

½ Cup picked tarragon leaves

 

Method:

 

Preheat oven to 220C. Line a large oven tray with baking paper. Place olive oil and onion into a heavy based saucepan. Cook until softened, then add balsamic and brown sugar and simmer until onion is tender and caramelized.

 

Place pastry rectangles onto lined tray. Spread a quarter of the onion mixture onto each piece of puff pastry, leaving approx. 1cm border around the edge. Use a fork or knife to score this border lightly. Arrange sliced peaches on each tart. Transfer to the oven and bake for 10-15 minutes or until pastry is golden and crisp.

 

Remove tarts from the oven. Top with goats cheese and tarragon leaves to serve.
